PECORINO GINEPRO – RAW SHEEP  from Pulgia, ITALY

PECORINO FOJE de NOCE – RAW SHEEP from MARCHES, ITALY

 

Thym Tamarre .. goat .. that feed on thyme * lavender*rosemary*sage*marjoram and more WOW!

Bra Tenero – cow -Piedmont region, North West Italy*slightly picante * semi-firm * pairs well w/big reds

Fontina Val D’Aosta  .. cow, firm, matured in grottos for 3 months .. northwest region of Italy in the Alps-big red wines!

Piave – cow - Veneto region, North East Italy*very intense flavor * hard *great w/rose

Robiola La Rossa – mixed - wrapped in cherry leaves that have been macerated in brandy * wonderful w/earthy wine

Gorgonzola Cremificato – cow -creamy and young, milky w/ specks of mature blue,  perfect w/dessert wines

Bianco Sardo di Moliterno – sheep - Puglia region * earthy sweet and sometimes tangy *hard * great w/ Pulian wines!

Robiola Fia – goat, cow, sheep – Piedmont region*wrapped in fig leaf* allowed to age for 30 days! * great w/trebbiano!

Taleggio – cow- Valteleggio region near Lombary*smelly yet mild flavor*soft and oozy*great w/barbera, barolo, taurasi
